Shan Khout Swal - Shan Noodle
It's not a sin to miss your hometown breakfast, especially when you've been away from your home country for more than four years. It can be heartbreaking. The main difference between breakfast shops here and in my hometown is the starting time. They start early, around 6 am. Here, the earliest opening time is 7:30 am or 8:00 am, and it's rare. The saddest thing is that there are no noodle shops for breakfast. Trust me, the noodle houses here are good, but they only open for lunch and dinner. If I had a Christmas wish list, I would add "Breakfast Noodle House" in Perth to it.
Before anything happens, let's make a homemade noodle dish. Shan Khout Shwal is a popular early meal in Burma. Shan is one of the eight races that are known for making delicious food. Khout Shwal stands for any type of noodle, such as rice noodles, egg noodles, and more in the Burmese language.There
are various types of Shan noodles such as soup, dry or tofu Shan noodles, and
more. However, I will share an easy and delicious recipe with you that can be
enjoyed at home without any fancy requirements.
Ingredients
300g
Boneless Chicken Thigh (Cut into small dice)
1 tsp of
oyster sauce
1 tsp of
thick soy sauce
1 tsp of
tamari (Japanese soy sauce – Please use your preference)
½ tsp of
Chinese Five Spices
½ tsp of
Cayenne pepper
½ tsp of
Turmeric powder
½ tsp of
Paprika Powder
Salt and
pepper (seasoning)
2 medium
tomato (Blend it)
½ Onion (Finely
Chopped)
5 Garlic
Cloves (Finely Chopped)
1 tbsp
of Chilli Bean Sauce – Taban Djan – Lee Kum Kee Brand (optional)
150 g of
Rice Noodles (Your Preferred Brand)

Method
Step 1 : Marinate
the chicken with salt, pepper, sugar, cayenne pepper, Chinese five spices,
thick soy sauce, soy sauce, and oyster. Let it sit aside for 15-20 minutes.
Step 2 : Heat
up some oil in your preferred pot until it's hot, then add finely chopped
onions along with turmeric and paprika powder. Stir the mixture and let the
onions cook until they start to brown. Then, add the garlic and continue
stirring until you can smell its aroma. Next, add some blended tomato and cook
until there is no liquid left.
Step 3 : Add marinated chicken and cook until there is no pink. Then add 300 ml of water and wait for it to boil. Cover with a lid. When the chicken is cooked, reduce the liquid until it thickens into a sauce similar to Bolognese. In this stage, you can add 1 tbsp of Lee Kum Kee Chilli Bean Sauce. Stir for 1 more minute and the sauce is ready.
Step 4 : To prepare the noodles,
please refer to the instructions on the package of your preferred brand of rice
noodles. If you do not like rice noodles, you may use any type of noodles that
you prefer. Once the noodles are cooked, add one large spoonful of chicken
sauce and other condiments such as garlic oil, Chinese five-spice oil, chilli
oil, and seasonings. Mix everything well to ensure the flavours are evenly
distributed.
Step 5 : Enjoy your meal.
This is my favourite way to eat: I like to add some greens and have either
Burmese or Shan pickle on the side with my soup. It always makes me happy.
