Ohn No Khout Swel - Coconut Noodle
One of the most famous dishes in Burma is Mont Hin Khar, which is made with chickpea powder. Another popular dish that uses the same ingredient is Ohn No Khout Swel. It is said that cooking Ohn No Khout Swel is easier than Mont Hin Khar, but for me, both require a little bit of patience.
Ohn No means coconut, while Khout Swel
refers to egg noodles. However, it's common just to say Coconut Noodle. If we say,
"Ohn No Khout Swel," we know it comes with chicken, but some
families like to make it with lobster for a truly delicious meal. Today, I'll
share with you the traditional recipe for this dish.
In my
city, we have shops everywhere that serve Ohn No Khout Swel throughout
the day, so we don't cook at home very often. However, we will cook on special
occasions like birthdays and celebrations.
This
Recipe is for 7 to 8 Serves.

Ingredients
Spaghetti
(one pack)
Whole
Chicken
75g of
Chickpea powder or Flour
400ml (one
Can) of Ayam Coconut milk
3 Brown onion
(Half for stock, half for paste)
1 carrot
10 cloves
of garlic (half for stock, half for paste)
50g of Ginger
(half for Stock, half for paste)
Paprika
powder
Turmeric
powder
Fish sauce
Salt and
pepper
Toppings
Semi Hard-boiled
Eggs
Red Onion
(Thinly Slice)
Coriander
(Roughly chopped)
Beansprout
(blanch)
Fine roasted
chili powder
Lime wedges
Preparation
- First, put 75g of chickpea flour into 200 ml of cold water and let the flour sink into the water itself.
- For making chicken stock, I prefer to use a whole chicken. I use all the bones and wings for the chicken stock along with some vegetables such as onion, carrot, ginger, and garlic. Add 1.5 or 2L of cold water to it and wait for it to boil. Then simmer it for 2 hours. I kept two chicken breasts aside for other dishes and used only two marylands. I cut them into small cubes and marinated them with salt, white pepper, paprika powder, turmeric powder, and oil.
If you don't like making chicken stock, you can buy 2 litres of chicken stock and 2 boneless marylands or breast pieces as per your preference.
- To make the spice paste, you will need 1 ½ brown onions, 5 cloves of garlic, 25g of ginger, and 1 tsp each of paprika powder, turmeric powder, and fish sauce. Blend all these ingredients together using a blender or food processor to save time. If you don't have a blender or food processor, you can use a mortar and pestle to create the paste. Alternatively, finely chop the onion, garlic, and ginger, then add the other ingredients while cooking.
Let’s cook!
Step 1 : Heat up 3 tablespoons of cooking oil in a
pot with medium heat until it's hot. Then add the spice paste and cook it until
there is no moisture left and the aroma is released. Next, add the chicken and
cook until there is no pink colour and no moisture left. After that, pour a can
of coconut milk into the pot.
The
more coconut milk you add, the tastier the dish will be. However, if you have
high blood pressure or diabetes, it's recommended to use only half of the can.
Always remember that taking precautions is better than anything else.
Please
stir occasionally and wait for the mixture to come to a boil. Once boiling,
turn off the stove, cover with a lid, and put aside.
Step 2 : Pour all the chicken stock we prepared into
a large pot and heat it over medium heat. Slowly add the chickpea liquid
mixture to the stock while stirring continuously. It is important to keep
stirring to prevent the chickpea powder from settling at the bottom of the pot
and getting cooked. Wait until the mixture starts boiling while still stirring.
Please make sure there is no more raw chickpea smell.
Step 3 : Add all of the chicken with coconut to the
pot and wait for it to boil again. Adjust the seasoning by adding only sugar,
salt, and pepper. Adding sugar is a secret to this dish that enhances the
coconut flavour. Once it boils again, the dish is ready to be served.
Step 4 : Follow the instructions to boil the
spaghetti. I prefer it slightly soft because it's best for coconut noodles.
Start
by putting a generous amount of noodles in your bowl. Next, add a full ladle of
coconut chickpea chicken soup. Then, add all the toppings including boiled egg,
chilli, red onion slices, and bean sprouts. If you like coriander, you can add
that too. Finally, adjust the flavour of the dish by squeezing fresh lime juice
over it. Enjoy!
